Concentrated sun dried pepper flavour with a smoky edge, brightened by the acidity of preserved lemons and looser in consistency than most pastes, which makes it easy to spread directly onto meat or fish. Medium heat, so you can use a generous amount and get the flavour without overwhelming everything else. The Bon Apptit test kitchen has been vocal about it, and it's easy to see why.
