It is cooked in Stone Brick Ovens and crushed using a Roller Mill. The type of fermentation is Open air fermentation, and the spirit is distilled in Pot Still Copper Coil. Bottled at NOM #1570 with 100% agave, it is released at 40% abv (80 proof).
