The brown cheese is cooked in a traditional way in pots at the TINE Dairy Lom & Skjk in Gudbrandsdalen. Cooking in pots results in a smoother and softer cheese. In line with the traditional recipe, the cheese is added extra cream and browned for increased caramelization for the sake of flavor.
